Thank you for this wonderful recipe, which I've adapted here...
...Of course as hinted to in previous posts, one of the greatest things you can do for the people you love is to actually make something especially for them. In this case, for my son Gregory and my delightful little squeeze, Mrs. H;
ROSEMARY SHORTBREAD COOKIES!
Greg and I happily collaborated on making this. Hamlisch, you asked for the recipe so here it is:
225g flour + extra for dusting
pinch o' sea salt
75g caster sugar
150g butter cut into cubes and left to warm to room temperature
small rosemary sprig
Set oven to 170C, line a baking sheet with baking paper
Sift flour and salt into a large bowl, rub in butter with fingers to a breadcrumb consistency.
Mix in rosemary. Knead the dough until it is soft with no cracks or wrinkles.
Cut dough in half, make two 12X12cm squares and cut each evenly into 12 rectangles.
Transfer to baking sheet. Prick each cookie lightly with a fork, bake for 30 minutes until golden but still a little spongy.
Immediately after baking, sprinkle the cookies with caster sugar
and leave to cool on the baking sheet.
Next time, I'm either going to use thyme or mint from the garden...
